The secret to great Nigerian cooking is layers of flavour. A few key spices and seasonings go a long way.

The essentials

  • Suya spice: a peppery, nutty blend for grilled meat and fish.
  • Pepper soup spice: a warming mix for broths and soups.
  • Hot chilli pepper: adds heat to stews, soups and sauces. Start small and build up.
  • Locust beans (iru): a deep, savoury flavour for soups and stews.
  • Crayfish: ground or whole, it adds a rich seafood depth to almost any pot.

A simple tip

Add spices in stages, tasting as you go. It is easier to add more than to take it away.
